What can go wrong with the combination of ground chicken, ricotta, and zucchini? ⁠
These colorful and delicious packages are the perfect way to give your day a boost of joy!

And you can vary with them, and change the filling to your liking, for example, replace the ricotta with cottage cheese or add bacon.⁠

Low-Carb Chicken-Ricotta Packages⁠

Ingredients

  • 1/2 onion⁠, diced⁠
  • 2 garlic cloves, chopped ⁠
  • 500 g ground chicken ⁠
  • 250 g ricotta⁠
  • 1 egg⁠
  • 40 g parmesan cheese⁠
  • pepper and salt, to taste⁠
  • 1 zucchini⁠
  • Butter or olive oil⁠
  • 50 g cherry tomatoes⁠
  • 1 tsp thyme⁠
  • 1 tsp oregano⁠
Instructions
  1. Preheat the oven to 190 °C.⁠
  2. Put butter in a skillet, and fry the onion and 1 garlic clove for about 2 minutes. Add the ground chicken, and cook for another 5-6 minutes, on medium-high heat.⁠
  3. Pour the ground chicken mixture into a large bowl and let it cool for a bit. Once cooled, add the ricotta, egg, parmesan cheese, pepper, salt, and the other garlic clove. Mix with your hands until well combined. ⁠
  4. Slice the zucchini into equal long, thin slices. Place 2 slices of zucchini horizontally, and 2 slices vertically (that way you create a cross).⁠
  5.  Scoop a bit of the ricotta-chicken mixture in the middle of the cross. Fold the edges of the zucchini, and make a little package out of it. Continue this process until you used up all zucchini or all of the ricotta-chicken mixture.⁠
  6. Butter a baking tray with oil or butter, place the cherry tomatoes in the tray and sprinkle the oregano, thyme, salt, and pepper on top. Place a few garlic cloves in the tray if you want some extra flavor!⁠
  7. Place the ricotta-chicken packages on top of the tomatoes, and put in the oven for 25-30 minutes.⁠
  8. Serve the packages on a plate and sprinkle parmesan cheese and fresh basil on top. ⁠Enjoy!⁠
